Harvest begins at Chateau Kefraya between 25th of August and 1st of September each year, in accordance with samples taken from the vineyard for each color and grape-variety. These samples help us to know the rate of natural sugar, total acidity, and pH of the grapes.

During harvest, we pick each grape-variety manually without leaves, separately from the others, and bring it to vats within minutes. Vinification then begins, differently for white, rose, and red wines.
