Rosé Wines
Red grapes are picking in the morning when the temperature is cool. Then they are destalked, crushed, and put in stainless steel vats. We watch the color every 4 hours. When it is estimated perfect, we stop the maceration between juice and pulp by bleeding, when means we extract the juice after 12 to 24 hours of maceration. The method of vinification is the same for white wines. We cool the juice at 5°C to allow the deposit of the must.
